A portrait should capture the personality, emotion & feeling of the subject and not just a physical image. You will only be able capture this when the subject is 110% comfortable, relaxed, & oblivious to the lens.

We don't shoot in a studio, be it traditional or on a 'white screen', because this is an un-natural environment and thus will create forced emotions. Only when you shoot a subject in it's own environment will you truely capture their personality.
